If you want a high protein, nourishing breakfast that also feels like eating cake, then you need to try these Carrot Cake Baked Oats.

The flavours of this are absolutely incredible, made with All Day Whey in Vanilla Maple for a bloat-free protein boost and spiced with cinnamon and nutmeg, this is going to become your Autumn go-to Breakfast

This is a larger recipe that will allow you to make 4-6 servings in one go, making this a great meal prep option

INGREDIENTS:

  • 2 cups rolled oats
  • 4 scoops @ivynutra All Day Whey
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch of salt
  • 4 baby carrots grated
  • 2 bananas, mashed (or 1/4 cup applesauce)
  • 2 tbsp maple syrup
  • 3 cups unsweetened almond milk
  • 3-4 tbsp raisins (optional)

METHOD:

  • Preheat oven to 180 degrees fan forced
  • In a large mixing bowl, combine all dry ingredients
  • Mix in grated carrots, mashed banana, maple syrup and almond milk
  • Fold in add ins such as raisins and walnuts
  • Line a baking dish and bake for 30 mins
  • Leave to cool before slicing into 6 squares
  • Top with greek yoghurt, walnuts and a drizzle of honey
